Navratan means 'nine jewels' — we combine nine different vegetables and fruits in a rich, mildly spiced sauce with cashews and sultanas. This royal Mughlai dish was served in emperors' courts, and we prepare it the same way with cream, almonds, and aromatic whole spices.
