Our Balti paste is a carefully guarded blend of roasted spices that we grind fresh each week - coriander seeds, cumin, and dried chilies that fill the kitchen with their smoky fragrance. Mixed vegetables are stir-fried at high heat with this paste until they're perfectly tender but still retain their bite. The addition of fresh tomatoes creates a vibrant, chunky sauce that clings to every piece.
