We start with premium Irish lamb, cutting it into generous chunks before braising with fresh button mushrooms and aromatic ginger-garlic paste. The lamb becomes so tender it melts on your tongue, while the mushrooms soak up all the rich, spiced juices. Fresh coriander added just before serving gives it that bright, herbaceous finish.
